Difficult to read

It's very 'artsy' to use a lighter color 'grey-scale' for books but the degree of very light grey printing makes the book hard to read. I have good eyesight and I love Jamie Oliver's presentations and ideas so was really looking forward to this book. But, as a cook book, when you need to go back and forth for directions, it's just not practical. While it's not unique to this book, I wonder why such books aren't done with a spiral binding so that they can lay flat for easy viewing while using.
