About the Author
Matthew Lederman, MD, is a board-certified internal medicine physician specializing in nutrition and lifestyle medicine. He lectures for the eCornell T. Colin Campbell Certificate Program in Plant Based Nutrition and appeared in the films Healing Cancer From the Inside Out and Forks Over Knives. However, like every other cookbook, I'm finding it far too complicated, they can't just have simplified versions of recipes. One is expected to have access and supply to an overwhelming number and variety of ingredients, so many I've never heard of, and I'm not new to this either, our kitchen is very well stocked with vegan food items, supplements, seeds, spices etc.
And yet, the recipes in the book are almost as if for beginners? Things like mashed potatoes and gravy, stuffed roasted tomatoes... There aren't really any recipes that cover a comprehensive dinner, except a few pastas and casseroles, and seeing as it's for "family" there aren't many things in here that interest my children either!
Perhaps there just aren't enough recipes...at first it looks like there are. But we just skip over so many things that don't interest us, and even the simple ones seem overcomplicated. The recipes take an incredible amount of time to prepare. There are a few good cheese recipes. Sadly most of this stuff can be found online. I bought it to help us make the switch and the bottom line is we hardly used it and now we don't touch it.
