I'm a meat eater who raised a vegetarian daughter so I spent years makinfg dishes that could make both carnivores and vegetarians happy, such as pasta that can have meat added separately, or chilli with lots of beans, peppers and onions, but then a separate pot so meat could be added to half the batch. Recently I've decided to veer more into recipes that were always intended to be vegetarian, not adapted to become vegetarian. Let me tell you there are some delicious vegetarian dishes in this book. I am especially in love with the Tomatoes and Potatoes Salad With Avocado-Dill Dressing. Even the confirmed meat eaters in my circle have eaten this salad and said "Man that salad was incredible!". Also getting good reviews from my family are a number of the grain, nut, egg dishes. Everything I've made from this book I've been happy with. I like flavorable meals with lots of seasoning and zip. I've been happy with everything in this book without feeling the need to add more seasoning. My only complaint is that each recipe doesn't have a photo. There is a photo section with 22 pictures but it would be much easier to get the idea of each dish if there was a photo placed with each recipe. Also there is no nutritional info for the recipes. But I do like that the estimated start-to-finish time is included for each recipe, and there are suggestions of which recipes to combine to make a complete meal. The only reason I'm giving this book four stars instead of 5 is the lack of photos. As for the recipes themselves, it's definitely a five star product.

This is a gourmet cookbook for people who are expert chefs and live in big cities where they can get the ingredients mentioned. Not for the rest of us. "Fast" means 45 minutes if you are an experienced gourmet chef with presumably all the skills. After figuring out I would not be able to utilize the book for much, I put it on the shelf. A couple days later I was making a cucumber salad, a pre-arranged commitment for a pot luck meal with friends. I looked in the index for cucumber, thinking I would get some idea on a new twist on my traditional cuke salad with dill, sour cream, tomato, onion, etc. Cucumber is not mentioned in the huge index. However, if you have fresh fennel, there are 798 things you can make with fresh fennel. This may be the first time I ever gave something one star.

Tonight I made Roasted Sweet Potatoes with a Black Bean Chili on top - garnished with cilantro, avocado and sour cream (the recipe called for plain yogurt) This was a home run! Each recipe has suggestions on what to serve with it (I LOVE THAT FEATURE) - I made a cabbage, pineapple and peanut salad with fresh cilantro. That was amazing! I could not believe that I made this meal. I never had fresh ingredients as a kid and that carried into my adulthood. I'm just now exploring these tastes and way of cooking. The flavors work so well together, that I can't wait to try more!! I bought this book because I was looking for a book on nutrition and I saw this cookbook had 15 five star reviews. Nothing lower. So I had to give it a try. They were right! There is an excellent section in the front of the book of favorite ingredients. This taught me how to store fresh herbs. In the back of the book are some internet links to some special spices. I checked the cost of these ingredients between the websites listed and Amazon and I found they were both pretty high. I went to retailmenot.com to find a website with a promotion for spices. I found a more affordable place. I would name that site, but I haven't received the items yet. Thank you Marie Simmons... I love your cookbook.

We have made Sauteed cabbage and crispy potato cake with melted cheese, Sauteed shredded beets with orange and basil, and steamed spinach with ginger and garlic. All were wonderful. The beets were the most surprising to me as I am not usually a big fan of beets, but they were very good, and matched especially well with the cabbage and potato dish. I love how the author makes suggestions of other recipes to make each dish a full meal. There is a little green box with every recipe called "Make a Meal" with suggestions for other dishes to go with the one you are looking at to make it, well a whole meal. The only thing I don't like about this cookbook, and this may be nothing to others, is there isn't a picture of the dish with every recipe. I really like having the visual, but that's the only thing I don't like.

This book, full of unique and delicious recipes, is getting increasing use as I look forward to each surprising and healthy taste treat. Time planning is key however because while cooking may be relatively short, preparation can take longer with some of the recipes.

Winter Vegetable Stew with Moroccan Flavors
Pan-Seared Tofu with Eggplant and Curried Tomato-Mint Sauce, using diced, but not pureed tomatoes and pre-cubed tofu.

I bought this cookbook and a couple other vegetarian ones a few months ago when our family decided to follow a whole-foods way of eating. I love to cook and can easily work my way around a recipe, which usually entails some doctoring on my part to get it "just right." Of all the cookbooks I bought, this one is hands down the best. I have made about 15 of the recipes and not only hasn't there been a dud in the bunch, they were all excellent. My most-recent favorite is the toasted bulgur pilaf with cumin, dried fruit and crispy shallots--I could eat this for days! I did doctor it a bit by adding some carrots and ginger, and cooked the shallots in some garlic olive oil I had just purchased; but it still would have been awesome without any additions/changes. What I especially like about this recipe is you can eat it warm or cold--perfect for the picnic I'll be taking it to at the end of June. And who knows, maybe it will even convert some of the guests into whole-foods nuts like us.

This is my favorite vegetarian cookbook out of the 4 or 5 I own. The recipes are not too difficult to make and the food is very tasty and healthy. Most recipes seem to be completed in less than 30 to 40 min. A variety of different recipes are included in the book, so one has recipes for main courses, soups, deserts, etc.

I'm a vegetarian, have tried a few cookbooks and this is my absolute favorite. This is actually my second purchase - I gave my first one to a friend as a present because it is so good and immediately purchased a second. What I like about it is that the recipes are simple and easy, and don't require you to have half a grocery store in your pantry in order to make one dish. Great for someone who wants to try something new and pick up a few items from the store, rather than running around looking for elaborate ingredients. Highly recommend!

It is a nice book with valuable information. That being said, I was looking for something a bit simpler to put together. Ingredients list is often lengthy and contains items that are difficult to get. But the worst part is the lack of pictures. I NEED a picture for each item. To me, this is a no-brainer. I need to see it before I even know if I want to make it. Had I known it only had 8 pages of pictures stuck in the middle nowhere near their recipes, I would NOT have bought the book.

When I received this book, I marked quite a few recipes to make. I made the Roasted Cauliflower, Red Bell Pepper dish first. The flavors were amazing! 3 produce items with a few staples in the oven for 20 minutes and I had cauliflower I couldn't stop eating. Then I made the Okra with Tomato Ginger Sauce. Again the flavors were amazing. I ordered this book based on other reviews and I am so delighted that I did. In the next few days I will be making the Curried Coconut Squash soup and the roasted asparagus with parmagiano. I don't know if anything will equal my love for the cauliflower (I've made it 2 more times this week) but I plan to keep trying. The recipes are simple. My greatest pleasure is the lack of "fake" ingredients, e.g. fake meats too numerous in other cookbooks. It's fresh ingredients and spices. You can't beat this!
