Mandarin Stir-fry with Bird’s Eye Broccoli
Serves: 4-6 | Prep time: 10 min
Cooking time: 15 min | Total time: 25 min
Remove sauce packet from 1 package Mandarin Orange Crispy Chick’n and place packet in a bowl of hot water for 3 minutes to defrost. Empty into a bowl and stir in 1 tsp fresh grated ginger and ¼ tsp red pepper flakes. Set aside.
Preheat 2 Tbsp oil in a non stick frying pan over medium heat. Add frozen chick’n and sauté, turning frequently, until golden and crispy, about 6 to 8 minutes. Remove to a plate.
In same frying pan, over medium heat, sauté red pepper and broccoli for 1 minute. Add water, cover and steam until peppers are just soft and broccoli is bright green, about 2 minutes. Remove lid and stir in chick’n and sauce. Cook, stirring constantly, until warmed through and well coated in sauce.
Garnish with 1 Tbsp sesame seeds. Serve with steamed rice.
Chef Tip: This stir fry works well with all types of vegetables. Try thinly sliced carrot, bok choy and snow peas.

Quick and Easy Meatless Lasagna
Serves 8 | Prep time: 10 minutes
Cooking time: 30 min | Total time: 40 minutes
Preheat oven to 375º F. In a skillet, heat up 2 cups of the marinara sauce until simmering, then add 1 bag frozen Gardein beefless round. Add 1 additional cup of sauce and let simmer for about 3 minutes.
Meanwhile, in a medium size bowl, add 24 oz cottage cheese (or vegan option), 1 egg (or vegan option), 1 tsp oregano, 1 tsp basil, and about 1/4 cup of mozzarella (or vegan option) and stir together.
In a 13×9 pan, spread a thin layer of the sauce mix on the bottom of the pan, then lay 4 oven-ready noodles across, then a layer of cottage cheese mix, and sauce mix. Repeat this twice. On the final layer just add the remaining sauce mix (there wont be too much left, just a thin layer). Then top with the remaining layer of cheese.
Cover with foil and cook in the oven for about 25 minutes. Finish 5-10 minutes uncovered.

Place frozen chick'n on a non-stick baking sheet, bake for 15-18 minutes [oven temperature may vary), until crisp and golden, turning once halfway through cooking. In a bowl toss heated pieces with warmed sauce and serve.Skillet: Heat 2 Tbsp. cooking oil in large skillet. Add frozen chick'n, cook 6-8 mins at medium heat, turning often until crisp and golden. Add warmed sauce and serve.Tip: Let rest 1 min and serve. Cook until internal temperature reaches minimum of 165 degrees F.For the sauce pack: Defrost: Place pack in bowl of hot water for 3 minutes to defrost.Microwave: Open and pour sauce into microwave safe bowl. Microwave 1 to 2 minutes until hot. Mix well with heated chick'n and serve.Stovetop: Open pack and pour into small sauce pan. Heat on low heat until warm, mix well with heated chick'n pieces and serve.Meal ideas: Mandarin chick'n dinner: Prepare as above. Garnish with finely chopped green onions. Serve with rich and steamed broccoli, snow peas or your favorite vegetable and top with sesame seeds.Mandarin orange crispy chick'n salad: Toss shredded savoy cabbage, chopped scallions, shredded carrots and cilantro in large bowl. Whisk together 1/4 cup rice vinegar, 1/4 cup olive or safflower oil, 1 tsp sesame oil, 2 tsp soy sauce, 1 tsp maple syrup. Pour dressing over greens and toss well. Saute 1 1/2 cups thinly sliced shiitake mushrooms or white button mushrooms until tender and slightly crisp. Add salt, pepper and 1 tsp tamari and set aside. Prepare mandarin chick'n (directions above).Add warm shiitakes and chick'n to greens and serve.

The only thing I would add is that you don't get much in each bag. The frozen packet of sauce is large and heavy and makes the bag appear to have more food in it than it actually does. The first time I bought this product and a bag of steamed rice to go with it, I only purchased one bag of Gardein mandarin chicken and when split between two people, we were still very hungry and had to mostly fill up on the rice. If you are feeding more than one person, I'd recommend 2 or more bags of this, which can get a bit expensive. Apparently a serving size of this stuff is "toddler sized".
I use Le Creuset because I can't cook! This bag is enough for only 2 people. I make basmati rice in my 3cup Dutch oven and the rice comes out perfectly every single time. As that is cooking, I prep broccoli, fresh carrot slices, bamboo slices and water chestnuts in a steamer. I use zero oil or butter in a Le C frying pan, add the chix pieces in frozen, cook 3 minutes a side and it comes out crispy coated perfectly. If you use oil it'll be soggy!! the bag of sauce laying on the hob is warmed up by now. When the rice is done in 12 min, I add rice to a bowl, pour some sauce all over to coat the rice, add the veg, mix it up, then top with the chix pieces. IT TASTES JUST LIKE CHINESE FOOD TAKEOUT! Now, if I cook with any other pots/pans, it's not the same for me. I'm a horrible cook. But this is my go to meal if anyone pops over, no questions, they're getting it - and it's gobble up every time. I have 3 bags in my freezer as I type this. I wish they'd make a variety of Asian cuisine like this one.
But lets not let this error take away from how great Gardein product are. They truly in my opinion are king when it comes to Vegan foods.
