I am guessing that many manufacturers are adding sugar because they can't get fully ripened mangoes anymore, most going to the canners and freezers. The only good way to eat them is raw, not cooked, canned, or frozen. When added to the entree after pulling the food off the heating element, they stay raw, just warmed up a bit. Cooking/freezing breaks down antioxidants (Vitamins A, C & E), as well as the digestive enzymes so prominent in tropical fruits and some other fruits and vegetables.
You eat mangoes because you need them. When suddenly you think of them, your brain is telling you that there is something in them you need now, generally for repair somewhere in the body or brain. If you don't tend to think of them, you obviously haven't tried them recently or in the many ways that you can eat them, so they aren't entered into your brain's database of foods you need.
I have gotten a few bags where the mango slices were very hard but I just placed them in front of my space heater for a few minutes and they softened right up.
Unfortunately, I have four bags left and may throw them out.
My search begins anew for the perfect dried mango like you can buy in Thailand.
