“Ultimate Veg” is not just another vegetarian cookbook. According to Jamie, he spent over 8 years traveling the globe collecting and perfecting the recipes for this volume, his admitted labor of love. I found the collection of recipes to be organized well and to include a few categories that were not the same old thing: PIES, PARCELS, & BAKES; TRAYBAKES; BURGERS & FRIES; BRUNCH. There’s a bunch more of the usual suspects.
Each recipe includes a list of ingredients and a step by step tutorial from the chef, in what I’m calling “Jamie Speak” - he’s got some unique turns of phrases that I’m sure have British colloquial roots:”reduce by half before scrunching in the tomatoes”; “bring to a boil then leave to tick away for 5 minutes”; “broil until beautifully golden and gnarly”; “ripple a good few shakes”. Sure livens up the recipe! Also included for each recipe is a full color photograph of the finished dish and expanded nutritional values - thank you very much.

But, if you like to follow a recipe to the T then this might not be for you. If you are an adventurous and seasoned cook then you will be able to make substitutions with confidence and Google unfamiliar terms and reap the benefits of his creative and interesting take on vegetables.
