Correct. Keep that door closed and use vents to control internal box temperature. This thermometer is extremely accurate, even the Taste (rare, med rare, medium, medium well, well done) seem to be right on to me. I'm using mine right now! Been smoking a pork butt since 9am and at 147 now. About another two hours and it's dinner time!
Correct! You can set alarms to alert you if temps creep too low or too high as well. Much love for my thermopro. I built my own ugly drum smoker and it really helped me learn to dial it in. Hope mine lasts a very long time but I"d buy another if I needed one.
Absolutely. I have my tramsitter outside of the smoker, with the two probes going through the vents into the smoker, and the other in the meat. Then you can carry around the receiver. It will even beep if the temperature gets too hot or cold.
