Please note that the leading disc that pushes the dough forward is plastic. This has been the single piece that has broken for us on other cookie presses, rendering them useless. So far, so good with this one, but I was disappointed to see it was plastic. see less The answer is both. no handle extension . not necessary when making cheese straws or cookies. I love my Marcato Biscuit/cookie press.

I just received my Deluxe version of this and it had the same Nickel and Lead disclosure on the box. The discs are definitely Nickel plated (That silver shiny look, not a stainless or aluminum look). Also, lead is sometimes used in nickel plating (quick search reveals this) so if I had to guess the discs also contain lead.

The press body, the end caps, the handle and the dies are aluminum. The insert at the top is plastic (the part that fits inside the top ring that the lever attaches to) as is the foot at the bottom that presses against the dough. Both are pretty sturdy.
