Hi! Shelf life is probably same as "Best By" date. CJ rice is finished fast here. I never thought of the shelf life. If the intention is for rice to be kept as part of a survival food stock seems best to buy rice packaged for long term storage.

I think its definitely edible without microwaving it, however, its better warmed up to make the rice a better texture to eat.
