Updated review: good food browning, some wear

Review update: I removed a single star because the pan already has two scratches. The ONLY thing I can think might have done it is a metal whisk that I used to make a sauce, but these scratches seem deep and the whisk was carefully used and not pressed against the finish. All our other cooking implements are bamboo and we store the pan with felt liners to prevent scratching, and we always let the pan cool slowly before washing. I have to say I’ve used an older Calphalon non-stick pan and it seemed to have less wear than this new pan does after just a couple of weeks. I only removed one star because the pan is still working and food still isn’t sticking, so we will see how the next few months go. I am a little more hesitant to praise the quality of this pan.
Original review: We used the pan for the first time last night making Italian sausage. It performed perfectly at medium high heat to brown little bits of sausage without a single piece sticking. When I washed it later I didn’t need to scrub at all.
The overall quality feels great. The handle is solid.
I will update this review as we’ve had the pan over more time. I have high hopes for the durability of the non stick surface. I have been reading that to care for the pan, it’s important not to quickly change its temperature (such as immediately washing the pan after cooking on high heat) and of course not to use metal in it, so I will be reviewing the durability under best case conditions.
I have to say I’m glad we finally sprang for this pan. We have gone through a few cheap non sticks from department stores, and they inevitably start to break down and then you’re getting Teflon coating in your food or released into the air. I’m glad I won’t have to throw away any more pans!
